Yams, circa 1840
The original yam, a root mainly grown in Africa, is many times larger than the yam produced today in North America. Yams were a dietary staple for most Africans and formed the core of their diet on board ship. The African agricultural sector played a key role in supplying yams and other foods needed for the Middle Passage. From William Rind, A History of the Vegetable Kingdom, 1865
